I got a recipe yesterday from a good rock listener that included 3 of my favorite things…Bacon, beer and ribs. Ribs are one of those foods that everyone thinks they have the best recipe for and I want to try them all. I’ve decided that the fall of 2010 will be the fall of the ribs. If you have a great rib recipe then forward it to me and I’m gonna try it out. I will also post the rib recipes that I get so we can all join in. Just like Hands Across America back in the 80′s, this will be our Hands Across Ribs.

4-6 lbs of ribs (I used 2 slabs of baby backs)
1 large spanish onion finely chopped
1 garlic head peeled and chopped (use the whole bulb)
3 bottles or cans of beer
Half cup balsamic vinegar (Worcestershire will work if you don’t have balsamic)
2tbsp brown sugar
Half pound of bacon.
Preheat oven to 250
Make sure they are meat side down,
Place ribs in large pan.
Mix onions, garlic, beer, balsamic, brown sugar
Pour the ingredients over the back of the ribs
Cut bacon into small pieces and lay over top of ribs.
Cover tightly with tin foil and cook for 3hrs.
Heat BBQ to med.(about 400 degrees) place ribs on grill, and slather in your favorite sauce, cook on each side for about 5 mins per side, saucing as desired.

For a homemade sauce, mix 1 cup of Bullseye chipotle sauce with a cup of Nostadts BBQ sauce, quarter cup Worchestershire and 4 cloves of minced garlic.
